
Baked chicken meatballs 🍝 A really quick dinner recipe that the entire family devoured. I served this on top of pasta for the kids. Yum x

Prep: 10 mins | Cook time: 25 mins | Serves: 4
What you will need:
- 500g Chicken mince
- A handful of parsley, chopped
- A handful of spinach, chopped
- 1/4 Cup of parmesan cheese + extra for the sauce
- 1/4 Cup breadcrumbs
- 1 Egg
- 1/2 Tsp garlic powder
- 1/2 Tsp onion powder
- 1 Tsp Oregano
- A sprinkling of salt
- 1 Bottle of tomato sauce of your choice
Method
- Start by preheating your oven to 180°C
- Add all the ingredients (minus the tomato sauce) in to a bowl and mix until combined
- Roll the mixture into small meatballs and fry them up in a cast iron pot for 2 minutes on each side
- Pour the jar of tomato sauce over the top with a sprinkling of parmesan cheese
- Place the pot into the oven with the lid on and allow to cook for 20 minutes
- Serve and enjoy!
